You can set any custom grid size through the main menu View → Grid Size → Custom.

Which line exactly does this refer to? Is it the automatically generated edges of the copper pour?

Line Width – size of the lines forming the copper pour. It is one of the basic copper pour parameters.

In practice, the Hide Wire option is often used at the final stage of routing connections. When several pins are already connected to each other, it is used to remove the numerous connection lines that hinder the readability of the schematic.

There is an option to control the copper pour configuration by changing the values in the Copper Pour Settings - Line Width and Line Spacing fields.
