I like the 'Update All Copper Pours' feature in the Objects menu but I would really like the ability to set all as unpoured too.
This would make the following scenario MUCH easier...
When working on a 4-layer board that has copper flood on every layer, before I can do something that affects every layer, such as add a new static via, I have to step through each layer, select every pour (and there could be more than one on a single layer), and then set state to unpoured.

Take a look at the design manager toolbar on the right side.
You can uncheck 'Copper Pours' in the objects panel to hide all layers at once.
Make the changes and then unhide and 'Update All Copper Pours' from main menu.

I agree with the OP; "unpour all" is really kind of necessary.
The problem with hiding pours is that they still exist in the design, so any changes that overlap existing pours trigger DRC violations. Pours being the odd, convoluted shapes that they are, the red DRC violation circles are drawn in at fairly high density, obscuring the work you're trying to do. You really just want those pours to not exist for the time being.
Sure, you can turn off real-time DRC as well, but then you don't get feedback for such basic things as trace proximities.

I also agree that a one-click solution would be very nice. As a workaround you can type a Control-A, right click on the edge of any of the pours, select State, then Unpoured. This will affect all copper pours.

We should also be able to push a pour below an existing pour so we can easily modify the top pour while being able to see the other pour below.
An example is when we have placed a bottom layer copper pour & a bottom layer solder mask. We can't see the bottom layer solder mask unless we hide the bottom layer copper pour.
We might want to make the bottom layer solder mask slightly smaller (or larger) than the bottom layer copper pour - but we can't see the bottom layer copper pour to reference to.
The same occurs with the solder paste layer pours.

In more recent versions you can assign hotkeys to pour and unpour copper pours.
